Pound Cake

poundcake-400-x-300.jpgIt’s not impossible to make a usually heavy fattening dessert into a tasteful lighter dessert.  Here’s a great example:

1 cup smart balance spread
1 cup egg substitute
1 1/2 c. sugar
1/2 c. milk (1%)
2 c. flour
2 tsp. baking powder
Dash of salt
1 tsp. vanilla

Blend ingredients in given order at low and then high for 10 minutes. Pour into greased 10-inch tube pan. Do not preheat oven. Bake at 350 degrees for 45-50 minutes.
