Here is a favorite recipe of mine. This zucchini is fat free except for the walnuts which has the omega healthy fat. My kids actually prefer this to the bread with all the fat in it, ie, oil and eggs. It’s so good when dieting because when you eat this (and a serving is a good size piece), you really feel like you’ve had something substantial. Have it for breakfast with tea, or a mid-day snack with milk. Enjoy!
1 1/2 cups flour
1 cup sugar
1 tsp cinnamon
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp nutmeg
1/4 tsp salt
1 1/2 cups shredded zucchini
1/4 cup egg substitute
1/4 cup applesauce
1/2 cup chopped walnuts
Mix dry ingredients in large mixing bowl. In a small bowl, mix zucchini, egg substitute and applesauce. Add zucchini mixture to dry ingredients, then fold in chopped walnuts. If it seems a little too dry, you can add a little more applesauce. Pour batter into loaf pan and bake on 350 for 1 hour. Bread is done when knife inserted comes out clean.
